Samboosa has become a very popular staple food during Ramadan. This is an easy Samboosa recipe that is sure to make your family happy and is delicious and quick enough that you may want to make it during the other months of the year. You can short cut this by using egg roll wrappers instead of making your own dough, but he dough is so easy to make you might as well go with the homemade version.

Dough Ingredients

  • 2.5 cups flour
  • ½ tablespoon oil
  • Warm water

Filling Ingredients

  • 1 pound ground lamb
  • 4 potatoes
  • ¼ cup fresh cilantro, finely chopped
  • 1 teaspoon onion powder
  • 1 teaspoon curry powder
  • Salt and pepper to taste

Directions

Add oil to the center of the flour and add a little warm water, ½ tablespoon at a time until you get a soft dough. It won’t take much water at all. Pull off small amounts of dough and stretch out to create a thin 3-4 inch diameter circle. Place on a greased sheet and cover with a damp bread cloth for at least an hour to rise.

Cook the lamb and drain, set aside. Boil potatoes until “soft-firm” and then dice into ¼ inch pieces. Mix the lamb, the potato and other filling ingredients.

Re-stretch or roll out the dough and then cut in half, load a spoonful (or more) of the filling on half of the semicircle dough and then fold the other half on top and seal with warm water. Deep fry until dough is golden brown.
